1 tablespoon butter

1/4 cup sliced green onion
4 eggs
1 cup milk
1 cup shredded Swiss cheese
1 cup shredded mozzarella cheese

Directions
Split croissants in half and place bottoms cut side up in one layer in a rectangular casserole.
Melt butter in a fry pan.
Sauté’ mushrooms and green onion until tender and liquid has evaporated.

Roast until caramelized, about 15 minutes.In a medium sauté pan, heat remaining olive oil over medium heat. Add garlic, yellow onion, carrots and celery and cook until softened, about 8 minutes. Add roasted tomatoes, reserved tomato juice, chicken broth and bay leaves. Reduce heat and simmer for 15 to 20 minutes. Add basil and heavy cream, stirring to combine; remove bay leaves. In a food processor or using a hand blender, purée until smooth.</p>

<li>In a large bowl (KitchenAid&#8217;s great for this) beat butter, brown sugar, and egg on medium speed until well blended.</li>
<li>Add molasses, vanilla, and lemon zest and continue to mix until well blended.</li>
<li>Gradually stir in dry ingredients until blended and smooth.</li>
<li>Divide dough in half and wrap each half in plastic and let stand at room temperature for at least 2 hours or up to 8 hours.</li>
<li>(Dough can be stored in the refrigerator for up to 4 days, but in this case it should be refrigerated. Return to room temp before using.) Preheat oven to 375°.</li>
<li>Grease or line cookie sheets with parchment paper.</li>
<li>Place 1 portion of the dough on a lightly floured surface.</li>
<li>Sprinkle flour over dough and rolling pin.</li>
<li>Roll dough to a scant 1/4-inch thick.</li>
<li>Use additional flour to avoid sticking.</li>
<li>Cut out cookies with desired cutter&#8211; the ginger bread man is our favorite of course.</li>
<li>Space cookies 1 1/2-inches apart.</li>
<li>Bake 1 sheet at a time for 7-10 minutes (the lower time will give you softer cookies&#8211; very good!).</li>
<li>Remove cookie sheet from oven and allow the cookies to stand until the cookies are firm enough to move to a wire rack.</li>
<li>After cookies are cool you may decorate them any way you like.</li>
<li>I usually brush them with a powdered sugar glaze when I am in a hurry, but they look wonderful decorated with Royal icing.</li>

<p>Sandra and Pam will be visiting the third smallest town in Texas on Wednesday, December 2 when we go to Bay Street Theater for  <strong>A TUNA CHRISTMAS</strong>.  We’re hoping it will be as great as we’ve heard, and we’ll tell you all about it on Saturday’s show. </p>

<ol>
<li>Slice chicken into thin strips.</li>
<li>In bowl, mix together 1 tablespoons olive oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper &amp; salt.</li>
<li>Add beef strips and stir to coat, set aside.</li>
<li>Wrap tortillas in foil and place in 350° oven for 5-10 minutes or until heated through.</li>
<li>Cut onions in half lengthwise and slice into strips, cut your peppers into strips.</li>
<li>In large non stick skillet over medium high heat, heat remaining tablespoons of olive oil.</li>
<li>Add onions &amp; peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.</li>
<li>Add beef to skillet, cook, stirring for 3-4 minutes or until they lose their red color.</li>
<li>Return onions and peppers to skillet; stir for about one minute.</li>
<li>To serve, spoon a portion of the beef mixture down the centre of each tortilla, top with your desired toppings , fold bottom of tortilla up over filling, fold the sides in, overlapping.</li>
